After making a less-than-successful coconut cake a few nights ago, I now have almost a half gallon of buttermilk to use. I have made Barefoot Contessa’s delicious cheddar buttermilk biscuits and the Lee Brothers’ sweet potato and buttermilk pie in the past, but I’m hoping to use buttermilk in a main dish, not as part of a dessert or pancakes/bread. A search on the Food Network site turned up Tyler Florence’s Smothered Pork Chops, Emeril’s Pork and Black Bean Chalupas, and a lot of recipes for fried chicken and dipping sauces or dressings (like this BBQ chicken quesadilla with buttermilk dressing). Is there anything healthy you can make with buttermilk? Maybe this broccoli soup?

I suppose I could try making a buttermilk pie, which has always puzzled and intrigued me in equal measure. And buttermilk is always good for dipping green tomatoes, and maybe even making this fatty but tempting breakfast treat, Fried Green Tomatoes with Eggs and Hollandaise. Ooh…or maybe I could make onion rings (and only fantasize about putting them atop a giant burger.)
